I spent a few hours last night quietly “flipping” through a brand new iPad app called The Professional Chef by the Culinary Institute of America. To call this ebook, available through the Inkling platform, a cookbook is equivalent to calling the Queen Elizabeth II a rowboat. Named one of the five favorite culinary books of this decade by Food Arts magazine, The Professional Chef is the classic kitchen reference that many of America’s top chefs have used to understand basic skills and standards for quality as well as develop a sense of how cooking works.

The app is set up as a traditional book in the sense that it has chapters, quizzes at the end of each, an appendix and video index at its end.
